Tzatziki Sauce

Ingredients

  • 3/4 cucumber, partially peeled

  • 1 tsp salt, divided

  • 4 garlic cloves, peeled and finely minced

  • 1 tbsp olive oil

  • 1 tsp vinegar

  • 2 cups greek yogurt

  • 1/4 tsp white pepper

Directions

  • Grate the cucumber in a food processor. Toss with 1/2 tsp salt. Transfer to a fine mesh strainer over a deep bowl to drain. Get as much water out as possible.
  • In a large mixing bowl, place garlic, oil, vinegar, and 1/2 tsp salt. Mix.
  • Add the grated cucumber, yogurt, and pepper. Mix thouroughly.
  • Cover and refridgerate for 2 hours.
  • Notes
  • You an add some dill for a different flavor.
  • Tzatziki will last 2-4 days in the fridge.
