Ingredients
3/4 cucumber, partially peeled
1 tsp salt, divided
4 garlic cloves, peeled and finely minced
1 tbsp olive oil
1 tsp vinegar
2 cups greek yogurt
1/4 tsp white pepper
Directions
- Grate the cucumber in a food processor. Toss with 1/2 tsp salt. Transfer to a fine mesh strainer over a deep bowl to drain. Get as much water out as possible.
- In a large mixing bowl, place garlic, oil, vinegar, and 1/2 tsp salt. Mix.
- Add the grated cucumber, yogurt, and pepper. Mix thouroughly.
- Cover and refridgerate for 2 hours.
- Notes
- You an add some dill for a different flavor.
- Tzatziki will last 2-4 days in the fridge.
