Ingredients
Whole turkey
Onions
Celery
Carrots
Garlic
Fresh Thyme and Rosemary (2:1 ratio)
Butter
Olive Oil
Salt and Pepper
Water, 2 to 4 cups
Bacon, thick slice
Directions
- Preheat oven to 450F
- Stuff turkey
- Rub turkey generously with butter (LOTS)
- Drizzle with olive oil
- Roast turkey uncovered for 20-25 minutes to brown skin
- Remove turkey from oven
- Reduce oven temperature to 325F
- Layer bacon over entire turkey
- Add water to roaster
- Roast turkey for 13 minutes per pound. Don’t forget to subtract 20-25 minutes for previous cooking
- After internal temperature reaches 180F, remove turkey and let rest for 20-30 minutes
- Slice and drizzle drippings over slices for extra moisture
- OPTIONAL DIRECTIONS FOR MAKE AHEAD TURKEY
The Next Day - Preheat oven or portable roaster to 350F
- Layer turkey in a single layer (if possible) in a roaster
- Generously spoon drippings on each slice
- Roast for 20-30 minutes (depending on the size and number of layers)
