Stewed Toatoes

Ingredients

  • Roma tomatoes, 10

  • Green bell pepper, 3/4 cup, chopped

  • Onion, 1/2 cup, chopped

  • Celery, 1/2 cup, chopped

  • Sugar, 1 tsp

  • Salt, 1/2 tsp

  • Oregano, 1/4 tsp

  • Basil, 1/4 tsp

  • Pepper, to taste

  • Parsley, dried, 1 tsp

  • Green pepper, 1/4 cup

Directions

  • Blanch Tomatoes
  • Bring large pot of water to boil.
  • Cut tomatoes with an ‘x’ opposite of the stem.
  • Drop tomatoes in boiling pot and remove in 30-60 seconds.
  • Cook
  • Roughly dice tomatoes.
  • In a large pot, over medium heat, combine tomatoes, peppers, onion, and celery. Simmer 10 mins.
  • Reduce heat. Simmer 5 more minutes.
  • Stir in spices. Simmer 5 minutes.
