Ingredients
Roma tomatoes, 10
Green bell pepper, 3/4 cup, chopped
Onion, 1/2 cup, chopped
Celery, 1/2 cup, chopped
Sugar, 1 tsp
Salt, 1/2 tsp
Oregano, 1/4 tsp
Basil, 1/4 tsp
Pepper, to taste
Parsley, dried, 1 tsp
Green pepper, 1/4 cup
Directions
- Blanch Tomatoes
- Bring large pot of water to boil.
- Cut tomatoes with an ‘x’ opposite of the stem.
- Drop tomatoes in boiling pot and remove in 30-60 seconds.
- Cook
- Roughly dice tomatoes.
- In a large pot, over medium heat, combine tomatoes, peppers, onion, and celery. Simmer 10 mins.
- Reduce heat. Simmer 5 more minutes.
- Stir in spices. Simmer 5 minutes.
