Ingredients
2 tbsp butter
2 tbsp flour
1 cup whole (3.25%) milk
1-1/2 cups medium cheddar
1/4 tsp salt
1/4 tsp chilli powder
Directions
- Melt butter in small saucepan over medium heat
- Whisk in the flour and cook for 1 minute until they become bubbly and foamy
- Whisk in the milk and bring to a bubble. Simmer until thickened (enough to coat a spoon), about 2 minutes
- Turn off the heat
- Stir in the cheese small amounts at a time. If needed, turn the heat onto low to melt the cheese. Do not overheat
- Once all the cheese is melted, stir in the salt and chilli powder. Taste and adjust
