Nacho Cheese Sauce

Ingredients

  • 2 tbsp butter

  • 2 tbsp flour

  • 1 cup whole (3.25%) milk

  • 1-1/2 cups medium cheddar

  • 1/4 tsp salt

  • 1/4 tsp chilli powder

Directions

  • Melt butter in small saucepan over medium heat
  • Whisk in the flour and cook for 1 minute until they become bubbly and foamy
  • Whisk in the milk and bring to a bubble. Simmer until thickened (enough to coat a spoon), about 2 minutes
  • Turn off the heat
  • Stir in the cheese small amounts at a time.  If needed, turn the heat onto low to melt the cheese.  Do not overheat
  • Once all the cheese is melted, stir in the salt and chilli powder.  Taste and adjust
