Halibut with Dill Sauce

Ingredients

  • 4 halibut fillets

  • 2 tbsp olive oil

  • 1 shallot, finely chopped

  • 3/4 cup heavy cream

  • 2 tbsp fresh chopped dill

  • 1 tbsp chopped fresh parsley

  • salt and pepper to taste

Directions

  • Heat oven to 425 F
  • Brush halibut with olive oil.  Season with salt and pepper
  • Arrange in a lightly greased baking dish
  • Bake for 15 to minutes
  • Meanwhile, heat butter and sauté shallot
  • Add cream, dill, parsley, and salt and pepper to taste
  • Bring to a boil
  • Serve sauce over halibut
