Greek Style Baked Cod

Ingredients

  • 4-6 pieces cod

  • Lemon Juice Mixture
  • 5 tbsp fresh lemon juice

  • 5 tbsp olive oil

  • 2 tbsp melted butter

  • Coating
  • 1/3 cup flour

  • 1 tsp coriander

  • 3/4 tsp paprika

  • 3/4 tsp cumin

  • 3/4 tsp salt

  • 1/2 tsp pepper

  • Finishing Touches
  • 5 garlic cloves, minced

  • 1/4 cup parsley, chopped for garnish

Directions

  • Preheat oven to 400F.
  • In a small bowl #1, mix lemon juice, olive oil and butter in a shallow bowl.
  • In a medium bowl #2, mix flour and spices.
  • Pat fish fillets dry. Dip fish in lemon mixture then flour mixture. Shake off excess.
  • Save excess lemon mixture.
  • Heat 2 tbsp oil in a cast iron pan (or a pan that can retain a LOT of heat and is oven safe). The oil should shimmer but not smoke. If you have a heat gun, the oil should be 375F (190C).
  • Add fish and sear on each side. Do not fully cook. This should take about 2 minutes each side. Remove from heat.
  • Drizzle remaining lemon mixture over fish. Sprinkle garlic over fish.
  • Bake in oven for 10 minutes.
  • Sprinle parlsey over fish and serve.
