Ingredients
4-6 pieces cod
- Lemon Juice Mixture
5 tbsp fresh lemon juice
5 tbsp olive oil
2 tbsp melted butter
- Coating
1/3 cup flour
1 tsp coriander
3/4 tsp paprika
3/4 tsp cumin
3/4 tsp salt
1/2 tsp pepper
- Finishing Touches
5 garlic cloves, minced
1/4 cup parsley, chopped for garnish
Directions
- Preheat oven to 400F.
- In a small bowl #1, mix lemon juice, olive oil and butter in a shallow bowl.
- In a medium bowl #2, mix flour and spices.
- Pat fish fillets dry. Dip fish in lemon mixture then flour mixture. Shake off excess.
- Save excess lemon mixture.
- Heat 2 tbsp oil in a cast iron pan (or a pan that can retain a LOT of heat and is oven safe). The oil should shimmer but not smoke. If you have a heat gun, the oil should be 375F (190C).
- Add fish and sear on each side. Do not fully cook. This should take about 2 minutes each side. Remove from heat.
- Drizzle remaining lemon mixture over fish. Sprinkle garlic over fish.
- Bake in oven for 10 minutes.
- Sprinle parlsey over fish and serve.
