Greek Chicken Souvlaki

Ingredients

  • 1-1/2 lbs chicken breast

  • Pita Shells

  • Marinade

  • 10 garlic cloves

  • 2 tbsp oregano

  • 1 tsp rosemary

  • 1 tsp paprika

  • 1 tsp salt

  • 1 tsp pepper

  • 1/4 cup olive oil

  • 1/4 cup white wine

  • Juice of 1 lemon

  • Suggested Pita Fixings (add to your taste)

  • Tzaziki Sauce

  • Tomatoes

  • Onions

  • Lettuce

  • Pickles

  • Olives

Directions

  • Marinade (2 to 24 hours)
  • In a food processor (which you’ll use to make the tzaziki sauce later), add marinade ingredients. Pulse until well combined.
  • Cut chicken into 1-1/2″ cubes.
  • Place chicken into a large bag.
  • Add marinade into bag.
  • Refrigerate for 2-24 hours.
  • Soak Skewers (2 hours)
  • Soak 10 wooden skewers in water for 2 hours.
  • Cook Chicken
  • Prepare BBQ on medium heat.
  • Add chicken to skewers.
  • Grill chicken (8-15 minutes). Remove and let rest 3 minutes.
  • Finishing Touches
  • Grill pitas for 30 seconds on each side. Do not overheat! Serve immediately!
  • Spread Tzaziki on pita.
  • Add chicken and toppings (as desired).
