Garlic Dry Ribs

Ingredients

  • 4 pound pork loin

  • Oil for deep frying

  • Marinade
  • 1/4 cup soy sauce

  • 1/4 cup vinegar

  • 1 tsp lemon juice

  • 1/4 tsp sesame oil

  • 1 tbsp garlic powder

  • 1/2 tbsp onion powder

  • 1 tsp salt

  • 1/2 tsp pepper

  • Breading
  • 1-1/2 cup flour

  • 1/2 cup cornstarch

  • 1 tbsp dill

Directions

  • Marinate Pork (6-24 hours)
  • Cut pork loin into bit size cubes.
  • Mix marinade ingredients in a small bowl.
  • Place meat and marinade in a bag and refridigerate for 6-24 hours.
  • Prep and Cook
  • Heat oil in cast iron pan. The oil should shimmer but not smoke. If you have a heat gun the oil should be 365F.
  • In a large bowl, mix together breading ingredients.
  • Add pork in batches and mix well.
  • Place coated pork into heated pan in a single layer. Cook for 3-7 minutes. The pork should be crispy on the outside and juicy on the inside. There are a lot of variables with frying pork. You’ll have to experiment and check depending on your taste. My preference is 6 minutes for my setup.
  • Remove pork to a plate with paper towel to soak up extra oil.
