Chicken Lo Mein

Ingredients

  • 2 chicken breasts, thin strips

  • Linguini noodles

  • 1-1/2 cup broccoli

  • 1 cup red pepper, sliced

  • 1 cup carrots, sliced

  • 1 cup chopped onion

  • 2 garlic cloves, minced

  • 1 cup chicken broth

  • 1/4 cup soy sauce

  • 1/4 cup ketchup

  • 3 tablespoons vinegar

  • 1 tablespoon lemon juice

  • 1tablespoon oil

  • 1 tablespoon ginger

  • 2 teaspoons brown sugar

  • 1 teaspoon hot pepper sauce

  • 1/2 teaspoon black pepper

  • 2 tablespoons cornstarch

Directions

  • Boil water
  • Prep vegetables
  • Start cooking linguini in boiling pot of water
  • Cook chicken in olive oil over high heat
  • Saute onion and garlic over medium heat until soft
  • Add broth, soy sauce, ketchup, vinegar, lemon, oil, ginger, sugar, hot pepper sauce
  • Add carrots and cook half way over medium heat
  • Add cornstarch and boil
  • Add chicken, broccoli and peppers. Cook until tender
  • Serve over linguini
