Carrots Au Gratin

Ingredients

  • 4-1/2 cups carrots, sliced

  • 2/3 cup buttery crackers, crushed

  • 3 tablespoons butter, melted

  • 1/2 cup chopped onion

  • 3 tablespoons flour

  • 1/2 teaspoon salt

  • 1/4 teaspoon pepper

  • 1-1/2 cups milk

  • 2/3 cup grated cheese

Directions

  • Preheat oven to 350 F
  • Cook carrots until tender but still firm, about 6-10 minutes steamed.  Drain
  • In a small bowl, combine crushed crackers with 1 tablespoon butter.  Mix well.  Set aside
  • Over low heat, saute onions in 2 tablespoons butter.  Stir in flour, salt, and pepper.  Cook for a few minutes stirring.  Gradually pour in milk, stirring constantly. Increase heat to medium and cook until bubbly and thickened.  Add cheese and stir until smooth.  Fold in carrots
  • Pour mixture into 9×12″ baking dish and sprinkle with crumb mixture
  • Bake for 20 minutes
