Ingredients
4-1/2 cups carrots, sliced
2/3 cup buttery crackers, crushed
3 tablespoons butter, melted
1/2 cup chopped onion
3 tablespoons flour
1/2 teaspoon salt
1/4 teaspoon pepper
1-1/2 cups milk
2/3 cup grated cheese
Directions
- Preheat oven to 350 F
- Cook carrots until tender but still firm, about 6-10 minutes steamed. Drain
- In a small bowl, combine crushed crackers with 1 tablespoon butter. Mix well. Set aside
- Over low heat, saute onions in 2 tablespoons butter. Stir in flour, salt, and pepper. Cook for a few minutes stirring. Gradually pour in milk, stirring constantly. Increase heat to medium and cook until bubbly and thickened. Add cheese and stir until smooth. Fold in carrots
- Pour mixture into 9×12″ baking dish and sprinkle with crumb mixture
- Bake for 20 minutes
