Cactus Cut Potatoes

Ingredients- Dip

  • 6 tbsp sour cream

  • 1 cup ceasar salad dressing

  • 1-1/2 tbsp parmesan cheese, finely grated

  • 1-1/2 tbsp green onion, finely chopped

  • 1/4 tsp dried chilli flakes

  • INGREDIENTS – POTATOES
  • 4 large russet potatoes

  • 3 tbsp olive oil

  • salt and pepper to taste

Directions

  • Mix together dip ingredients
  • Refrigerate for 2 hours to let flavours develop
  • Preheat oven to 400F
  • Grease 2 baking sheets
  • Toss the potatoes with olive oil, salt, and pepper
  • Lay out slices on baking sheets in a single layer
  • Bake 8-10 minutes on the first side, until golden
  • Flip and bake another 8-10 minutes, until golden
  • Serve with dip
