Burgers with Nacho Top

Ingredients

  • BURGERS
  • 1 3/4 pounds ground beef

  • 1/4 pound smoky bacon, finely chopped

  • 2 teaspoons pureed chipotle in abodo sauce

  • 2 tablespoons Worcestershire sauce

  • 2 garlic cloves, grated

  • 3 to 4 tablespoons onion, grated

  • Salt and pepper

  • 3 CHEESE QUESCE SAUCE
  • 2 tablespoons butter

  • 1 heaping teaspoon flour

  • 1 cup whole (3.25%) milk

  • 1 cup marble cheese

  • 1 cup Monterey Jack cheese

  • 1/3 cup Parmigiano-Reggiano cheese, grated (not processed)

  • TOPPINGS
  • Tortilla chips

  • Red Onion, minced (opt)

  • Tomato, chopped (opt)

  • Jalepenos, chopped (opt)

  • Any other desired toppings

Directions

  • BURGERS
  • Cook bacon until firm.
  • Mix beef, bacon, chipotle, Worcestershire, garlic, onion, salt and pepper
  • Form into 6 burgers.
  • QUESCO SAUCE
  • Melt butter in small saucepan over medium heat
  • Whisk in the flour and cook for 1 minute until they become bubbly and foamy
  • Whisk in the milk and bring to a bubble. Simmer until thickened (enough to coat a spoon), about 2 minutes
  • Turn off the heat
  • Stir in the cheese small amounts at a time.  If needed, turn the heat onto low to melt the cheese.  Do not over heat
