Ingredients
- Fish
Cod, 4-6 pieces
1/2 cup flour
Salt and pepper for seasoning
- Batter
1 cup flour
1-1/2 tsp baking powder
1/2 tsp salt
1/2 cup milk
1 tbsp water
1/2 tbsp olive oil
1/4 cup beer
- Fries
1 russet potatoe per person
Directions
- Prep Fries
- Peel and slice potatoes into fries. Soak in cold water for an hour to remove starch.
- Prior to cooking the fries, pat the fries with paper towel to remove as much water as possible. The drier they are, the crispier they’ll turn out.
- Prep Fish
- Mix flour salt and pepper in a shallow bowl.
- Coat fish pieces with flour mixture.
- Prior to cooking fish, shake off any excess flour.
- Prep Batter
- Combine all ingredients EXCEPT beer. Wisk just enough to wet the flour… lumps are good. The mixture will be thick. That’s ok. Set aside for now.
- Cook
- Fill a cast iron pan with oil (about 1/3). Heat to 350F.
- Place the fries into the oil. Cook for about 8 minutes.
- Remove them and set aside. You’ll be re-frying them after the fish to get them hot again.
- Ensure oil is at 350F.
- Add the beer to the batter. Wisk together. The consistancy should be close to yogurt. Add more liquid or flour as needed.
- Dip the fish in the batter.
- Add the fish to the oil and cook for 8 minutes.
- Remove fish and set on paper towel to soak up extra oil.
- The “extra” bits of batter left in the pan taste great! Enjoy them now!
- Add the fries back into the oil and warm for about 2 minutes. Remove and let drain on paper towel. Season with seasoning salt and pepper.
- Serve hot with lemon juice, vinegar, or tarter sauce.
