Beef with Tomatoes Stir-Fry

Ingredients

  • 1 1/2 pounds steak, cut into strips

  • 1/4 cup soy sauce

  • 2 tbsp sherry

  • cornstarch

  • 1 1/2 pounds tomatoes, cut into wedges, sprinkled with 2
    tbsp sugar

  • 2 cups broccoli

  • 1/4 cups onions

  • 1/4 cup celery

  • 1 tbsp minced ginger

  • 1 tbsp salt

  • Peanut oil

Directions

  • Marinate beef for at least 1 hour with soy sauce, sherry, and cornstarch
  • Heat peanut oil in pan. Cook beef in batches over high heat. Remove and set aside
  • Sauté onions and celery
  • Add tomatoes, garlic, ginger, salt and broccoli stalks (not crowns), and simmer covered
  • Add broccoli crowns and cook 5 minutes
  • Add beef
  • Serve over rice
