Borscht

Ingredients

  • Beets, 4 cups, diced

  • Onion, 1, diced

  • Carrots, 1 cup, diced

  • Potatoes, 2, diced

  • Dill, fresh, 1/2 cup

  • Green beans, 1/2 cup, diced

  • Peas, 1/2 cup

  • Tomatoes, 1 can

  • Garlic, 2 cloves, minced

  • Vinegar, 1 tbsp

  • Lemon juice, 2 tsp

  • Salt and pepper, to taste

  • Water, 6 cups

Directions

  • Saute onion in pan until soft.
  • Slow cooker
  • Add all ingredients to slow cooker.
  • Cook 10 to 12 hours on low or 5 to 6 hours on high
  • Stovetop
  • Cook 1-1/2 to 2 hours on low.
  • Serve
  • Serve with a tablespoon of sour cream in each bowl.
