Ingredients
1 pound beef, cooked and pulled
1 1/2 cans (284mL each) beef broth
3 carrots, diced
3 potatoes, cubed
1 cup frozen peas, thawed
3 tablespoons cornstarch
1/3 cup water
salt and pepper
2 pie crusts, 9 inch
Directions
- Preheat oven to 350 F
- In large saucepan over medium heat, pour in beef broth, carrots, and potatoes. Cook until almost tender; about 15 to 20 minutes
- Transfer carrots and potatoes to a large mixing bowl. Reserve liquid and pour into saucepan. Add beef and peas to carrots and potatoes
- Dissolve the cornstarch with 1/3 cup water. Pour into saucepan of beef broth stirring constantly. season with salt and pepper. Bring to a simmer and reduce heat. Cook for 5 minutes
- Prepare pie crust following package directions. Place beef mixture into pie crust. Pour gravy over top. Cover with other pie plate. Bake about 25 minutes
- Let cool 5 minutes before serving
